Abstract

In order to study their physico-chemical quality, four types of honey were sampled from Beni Mellal-Khenifra region in Morocco: citrus honey, euphorbia honey, carob honey and anise honey. Five physico-chemical parameters were analyzed: moisture content, electrical conductivity, ash content, pH, and hydroxymethylfurfural (HMF). The results showed significant differences in the physico-chemical composition among the analyzed honey samples. With the exception of citrus honey, all other honey samples comply with established quality standards.
