Nitrates and nitrites contents of meat products: Case of hot dog sausages sold in the Dakar market

Abstract

The control of nitrites and nitrates in the form of additives used in sausages proves necessary because of their adverse effects on human health despite their unavoidable use because of the microbiological safety they confer on PCSCVs. This study was conducted on 32 samples (divided into two groups) consisting of Hot Dog sausages and taken in four supermarkets selected randomly in the city of Dakar. The extracts obtained after extraction were subjected to the nitrite and nitrate assay procedure (group 1 only) described in the assay kit protocol, and the values ??obtained after the calculation of the nitrite contents were compared to the maximum limit. This ion allowed in the study matrix by the Codex Alimentarius. 100% of the samples in group 1 were non-compliant with the Codex standard against 25% of group 2. A total of 72% of the samples analyzed were non-compliant with the Codex standard. This work asserts the need for control to protect the population from the risks of exposure.
